Research suggests that kelp may be able to address both of the major problems underlying Western mal-nutrition: excessive energy intake and deficient nutrient intake. When scientists tested it in higher concentrations, they found that alginate, one of the fibers found in Kelp, reduced the body's fat uptake by 75 percent. This fiber is more effective anti-obesity agent than any over-the-counter weight-loss drug. Kelp is also packed with more vitamins and trace minerals than probably any other seaweed. Aside from containing impressive quantities of vitamins A, B, C, D, E, and K, kelp is also loaded with protein, fiber, iodine, and sodium.
